No-Bake EVOO Energy Bites

These simple and healthy no-bake EVOO Energy Bites are so good. It is packed with fiber, mineral, and naturally sweetened. Make these energy balls for tasty after-gym snacks or guilt-free breakfast.

EVOO Energy Bites

Ingredients

  • 2 tbsp cacao nibs
  • 50g rolled oats
  • 2 tbsp flax seeds
  • 100g pitted Medjool dates
  • 2 tbsp extra virgin olive oil

Toppings

  • toasted sesame seeds
  • chopped pumpkin seeds

Directions

  1. Put cacao nibs, oats, flax seeds and turmeric powder in a food processor. Pulse a few times until they are in small pieces.
  2. Add Medjool dates and pulse few more times until well-mixed. Mix in 2 tbsp of extra virgin olive oil, stir to combine.
  3. Scoop mixture and roll into balls. Roll the balls in toasted sesame seeds or chopped pumpkin seeds. Put in the refrigerator until solid.
