Cucumber Watermelon Smoothie

Although watermelon is an annual plant but their green skin and deep red flesh really give a hint of summer. Inside the hard rind, you will find juicy and sweet flesh and loaded with seeds that perfect for spitting out. 

I remember as a child I really love spitting out the watermelon seeds. But these days most of the watermelon sold in the supermarket is seedless and when they have seeds it mostly tiny and not fun for spitting out games.

I definitely miss out the fun of spitting the watermelon seeds, but the good news is making watermelon smoothies is easier when you use seedless watermelon. No need extra work to remove the seeds.

When the watermelon price is cheap I like to buy a whole big watermelon. I cut it into a cube, divide it into several single portions, put it in a freezer and take it out when I need it.

I like to add few mint leaves to my watermelon smoothies because it gives extra flavour, just skip it if you don’t like mint or substitute with other herbs like basil. The sourness of lime juice make the smoothies fresher and it adds extra vitamin C.

Ingredients

  • 2 cups frozen cubed seedless watermelon
  • 1/2 cup peeled and roughly chopped cucumber
  • 1 tablespoon honey
  • 2 tablespoons lime or lemon juice
  • few mint leaves
  • 2-3 tablespoon cold water, optional

Method

  • Add cucumber, honey and lime juice into a blender. Blend on high heat for 10-15 seconds until smooth.
  • Add half of frozen watermelon and blend until almost completely smooth. Add the remaining frozen watermelon and mint leaves, blend until creamy and smooth.
  • Add cold water if the frozen watermelon too hard or if the smoothies too thick.
  • Pour into a glass and serve with ice cubes and garnish with sliced watermelon or mint leaves.
