Dilmah Real High Tea Challenge at Immigrant

The second restaurant I visit for Dilmah Real High Tea challenge at Immigrant, I come there with the other 4 bloggers. Immigrant is a lounge and dining room that located in the same place on the 6th floor of Plaza Indonesia.

Chef Stephane Galibert working together with Mr. Seto as a bartender to create a new menu for Dilmah Real High Tea competition. For this competition they make 3 course menu and pairing it with tea drink.

  • Tomatoes, watermelon dressing and green tea puff rice paired with Dilmah Hot Green Tea with Jasmine flower.
  • Cured Salmon, Cucumber, Wasabi Cream and Earl Grey Tea Macaroon paired with Tea Cocktail

Tomatoes, watermelon dressing and green tea puff rice

We started our meal with a bowl of tomatoes salad to shared. Small black bowl consist of 4 slices tomatoes with watermelon dressing and rice puff crackers sprinkle with green tea.This tomato salad paired with Dilmah hot green tea with Jasmine flower character. Perfect proof that not everything taste good is bad for your body.

Cured Salmon, Cucumber and Earl grey tea macaroon

We move to the next course, this fish course is a feast for the eyes and the mouth. An array of bright orange fresh salmon,with thin slivers of cucumber, wasabi cream, earl grey tea macaroon and caviar. The firm flesh of raw salmon finished with a touch of salt, it give a nice subtle saltiness to the salmon, it nicely balance with the freshness of cucumber, and a mustard heat from the wasabi, while the earl grey tea macaroon, and caviar add an extra texture and flavor.

This salmon dish is beautifully paired with a cool sheladon tea cocktail. A mixed of gin, Dilmah green with mint tea, cucumber syrup, and a foamy egg white on top is a nice palate cleanser.

We finished our meal with a sweets ending. Tea poached pear, orange crumble, with chocolate sauce infused with Dilmah peppermint tea. A cubes of tea poached pear sitting inside a cocktail glass and orange tuile fit perfectly in a glass. The chocolate sauce was nice…sweet and smooth, too bad the peppermint tea a bit too shy. It will be better if the peppermint taste more intense.

Green fog is a hot tea drink mixed of tea, pandan syrup and milk foam with a sprinkle of wafer and tea crumble on top. This drink is a bit too sweet with an intense pandan taste.
