This indulgent grilled cheese sandwich is made with fluffy white bread and featured two kinds of melted gooey cheese, and get a sweet-tart flavor from caramelized onion and chive jam.

Grilled Cheese Sandwich
Onion and Chive Jam
- 1/4 cup vegetable oil
- 2 sweet or red onion
- 1/2 cup honey
- 1/2 cup balsamic vinegar
- 100-150g chives, cut into 2-inch long pieces
- salt and freshly cracked black pepper
Grilled Cheese Sandwich
- 4 slices sandwich bread
- 2 tbsp unsalted butter, room temperature
- 1 tbsp Dijon mustard
- Onion & chive jam
- 1/2 cup grated Gruyere cheese
- 1/2 cup grated mozzarella
Direction
- Spread one side of each bread slice with butter and the other sides with mustard.
- Heat the skillet over medium-low heat. Place two bread slices in the skillet, buttered-side down. Divide the cheese and onion jam evenly between them and top with the other bread slices, buttered-side up.
- Cook until the bread is golden brown, 5 to 7 minutes. Flip the sandwiches and cook on the other side until bread is golden and brown and cheese is melted.
- Slice sandwich in half and serve immediately.
